Happy Father's Day 2013

I hope you all had a wonderful Father’s Day. I made Baja Fish Tacos, with Southwestern Slaw and Mexican Crema.  

Here's the fish on the taco before it all got dressed up. The fish was marinated in a spice mixture and sauteéd.
 

Here's the taco with all the good stuff on top - lime juice and honey-dressed slaw, mangoes and tomatoes and the Mexican Crema, which was super easy - it's just sour cream with lime juice and rind. 








Next time - how Giada and Paula spent Father's Day (on television at least).

This looks so good! I'm guessing you didn't use 1/2 of vegetable oil?

The horse dad in my life would go crazy for these. He adores homemade tacos in general, but loves it when I use the seafood. Yes, everyone was wishing Kevin happy Father's Day knowing his "child" has four legs and smells bad.

I LOVE that you actually looked at the recipe. And you SO right. I used hardly any oil actually - about 2 teaspoons, just to help the marinade coat the fish better. I probably could have done without any. as long as I greased the grill pan.

Who says other fathers' kids don't smell bad?!! Maybe they don't have 4 legs, but I've never known a kid who couldn't use a bath.
