Who Wants To Win $25,000 AND A Trip To Napa?

I do! And I bet you do too! Unfortunately I haven’t given you much time. You have until NOON (PST) on Monday, September 7th to submit a really yummy sandwich recipe to the Peperoncini and Cherry Pepper folks, Mezzetta, for their Make That Sandwich™ contest. You have to use 2 of their products*.

They sent along 2 jars of their spicy good peppers to try. I have to admit I never considered the quality of hot peppers before. I’ve even been known to buy a supermarket brand. I had no idea what I was missing. The juice alone that the peppers come in is fantastic and I used a bit of it in my mayonnaise.

So put together a great sandwich (but not TOO great, I would love to win a trip to Napa), but do it quickly. Good luck to you…and me. Enter here. Contest rules are here.

Late Summer Spicy Chicken And Yellow Pepper Salad Sandwich

The last picnic of the summer requires a memorable sandwich that unmistakably makes its mark on the taste buds. This one takes full advantage of the peppery, spicy flavor of the Mezzetta peppers and gives this sandwich real zip. You can certainly use leftover chicken or even get a ½” thick piece of turkey from the deli and dice that.

1 small boneless chicken breast, cooked and diced

¼ yellow pepper, diced

1 small stalk celery, diced

2 tbls. mayonnaise

1 tsp. juice from Deli-Sliced Mezzetta Golden Green Peperoncini

½ tsp. chili powder

4 - 8 slices Deli-Sliced Mezzetta Hot Cherry Peppers, chopped finely

¼ tsp. salt

2 slices or 1 big slice good whole grain bread - cut in half, lightly toasted

2 tbls. Deli-Sliced Mezzetta Golden Green Peperoncini

thick tomato slice

small handful of lettuce

Mix together diced chicken, yellow pepper and celery.

In a separate bowl, stir together mayonnaise, peperoncini juice, chili powder, chopped cherry peppers and salt.

Stir two-thirds of the mayonnaise mixture into chicken.

Spread remaining mayonnaise onto the whole grain bread. Spoon chicken salad on one side.

Top with peperoncini, tomato and lettuce.

Place other piece of bread on top. Enjoy!

*Recipes must use at least two (or more) of the following products: Mezzetta® Brand (specialty peppers, olives and gourmet foods), Mezzetta® Deli-Sliced (sliced specialty peppers), Napa Valley Bistro® (specialty pasta sauces and olives) or Kona Coast® (teriyaki and BBQ sauces).
