They sent along 2 jars of their spicy good peppers to try. I have to admit I never considered the quality of hot peppers before. I’ve even been known to buy a supermarket brand. I had no idea what I was missing. The juice alone that the peppers come in is fantastic and I used a bit of it in my mayonnaise.
So put together a great sandwich (but not TOO great, I would love to win a trip to
Late Summer Spicy Chicken And Yellow Pepper Salad
Ingredients:
1 small boneless chicken breast, cooked and diced
¼ yellow pepper, diced
1 small stalk celery, diced
2 tbls. mayonnaise
1 tsp. juice from Deli-Sliced Mezzetta Golden Green Peperoncini
½ tsp. chili powder
4 - 8 slices Deli-Sliced Mezzetta Hot Cherry Peppers, chopped finely
¼ tsp. salt
2 slices or 1 big slice good whole grain bread - cut in half, lightly toasted
2 tbls. Deli-Sliced Mezzetta Golden Green Peperoncini
thick tomato slice
small handful of lettuce
Method:
Mix together diced chicken, yellow pepper and celery.
In a separate bowl, stir together mayonnaise, peperoncini juice, chili powder, chopped cherry peppers and salt.
Stir two-thirds of the mayonnaise mixture into chicken.
Spread remaining mayonnaise onto the whole grain bread. Spoon chicken salad on one side.
Top with peperoncini, tomato and lettuce.
Place other piece of bread on top. Enjoy!
